Preheat oven to 300F.
Line a rimmed baking sheet with either parchment paper or a silicon baking mat and set aside.
Add the oats, salt and cinnamon to a mixing bowl. Give the dry ingredients a nice stir.
Next, add the sweetener, coconut oil and vanilla extract and any other ingredients of choice to the dry ingredients. Give everything a good mix.
Pour the oat mixture onto the prepared baking sheet. Using the back of a spoon, bread the mixture evenly, pressing down gently on the granola.
Bake for 15-20 minutes or until a nice golden brown. Make sure to give granola a nice mix half way through the baking process to ensure everything gets toasted evenly.
Remove from oven and allow to cool completely.
Once cooled, break apart the granola in to the desired size chunks, place in an airtight container and store on a pantry shelf for up to 3 weeks.
