Delicious Homemade Granola

Ingredients
  

  • 2 Cups Oats Can be steel-cut or rolled oats.
  • 1/4 Cup Honey or maple syrup
  • 1/4 Cup Coconut oil
  • 2 Tsp Cinnamon
  • 1/2 Tsp Salt
  • 1 T Tsp Vanilla extract

Instructions
 

  • Preheat oven to 300F.
  • Line a rimmed baking sheet with either parchment paper or a silicon baking mat and set aside.
  • Add the oats, salt and cinnamon to a mixing bowl. Give the dry ingredients a nice stir.
  • Next, add the sweetener, coconut oil and vanilla extract and any other ingredients of choice to the dry ingredients. Give everything a good mix.
  • Pour the oat mixture onto the prepared baking sheet. Using the back of a spoon, bread the mixture evenly, pressing down gently on the granola.
  • Bake for 15-20 minutes or until a nice golden brown. Make sure to give granola a nice mix half way through the baking process to ensure everything gets toasted evenly.
  • Remove from oven and allow to cool completely.
  • Once cooled, break apart the granola in to the desired size chunks, place in an airtight container and store on a pantry shelf for up to 3 weeks.

Notes

If using shredded coconuts, add them in half way during the baking process and stir them into the mixture thoroughly. This will keep the coconut shreds from burning.
Make sure to allow the granola to completely cool before adding in chocolate chips. Otherwise, the chocolate will melt!
Be sure to line your baking sheet to keep the sweetener sticking to the oats and not on your pan!
